Aldo and I have been on an *amazing* vacation in Vancouver and Banff (check out some instagram shots and follow me on instagram!), so while I am away I wanted to share the second back-to-school recipe I created for Randall Beans: Black Bean Puff Pastry Triangles. (The first recipe I created was the Garbanzo Chicken Salad, which is a perfect healthy lunch for both kids and adults.)

This recipe is inspired by my grandma’s recipe where she stuffs puff pastry with different cheese mixtures – yes, just delicious melted cheese inside puff pastry dough, it is glorious!!

I’ve mentioned before that Aldo and I are house hunting (somewhat unsuccessfully, 🙁 ). I actually like our current apartment, but one of the reasons I want a house is to have more outdoor space for a garden. Right now I grow herbs on the stoop outside my apartment – I have parsley, rosemary, oregano, sage, lemon thyme, basil, and Thai basil growing. I love having access to fresh herbs whenever I am need them. There is nothing like fresh fragrant herbs to elevate the flavors in a dish.
But I do wish I had a proper garden so I can grow my own vegetables, including tomatoes. Is there anything better than a freshly picked tomato?? I can eat grape tomatoes like candy. Luckily tomatoes are in season now, so while I cannot grow my own (yet), the tomatoes at our local farmer’s market have been pretty awesome. Long term, I might want to live in the middle of nowhere and live off the earth and off of solar panels, but that’s a whole different story 🙂
