We love fresh peaches, both as a snack and to create delicious drinks, desserts, and even main dishes with them. Some of my favorites are my air fryer peaches, peach tomatillo salsa, swai with peach relish, and of course—this peach bourbon drink.

Two of our dear friends are getting married this year, and we are very excited and cannot wait to celebrate with them. Peach vanilla drink

I used a vanilla bean to make a homemade vanilla infused bourbon. If you want to play around with other flavors, you can try using orange rinds, rosemary sprigs, cloves and cinnamon sticks would also make a delicious infused liquor. The flask has a lid that seals nicely so your liquor won't lose the infused flavor quickly. 

This vanilla-infused bourbon was just so delicious!! The vanilla bean totally enhanced the flavor of the bourbon. After I made our drinks, I topped off the flask with more bourbon and let it continue infusing so that we can give our friends a really flavorful gift. 🙂

For this Vanilla Peach Fizz, I used a mojito muddler to muddle a small peach in a cocktail shaker until it became a puree. To that I added the vanilla infused bourbon, seltzer, and agave syrup. Shake it up, strain, and serve over ice! It is such an easy drink to make, and did I mention it is delicious?

I love that this Vanilla Peach Fizz uses fresh peaches to get that fruity flavor into the cocktail. None of that peach schnapps business! I mean, there is a time and a place for peach schnapps (10 years ago, college, lol), but if you want a cocktail that is bursting with fresh summer flavor, you need to use the real fruit. It is so easy to make these Vanilla Peach Fizz cocktails, so why not go the extra step and muddle up some fresh, juicy peaches?

Vanilla Peach Fizz

Vanilla Peach Fizz is the perfect summer drink, made with fresh flavorful peaches and homemade vanilla-infused bourbon. So refreshing and so delicious!

Ingredients

  • 1 small peach - (or ½ large peach), peeled and quartered
  • 2 shots vanilla bourbon - (see notes)
  • 12 oz club soda - (1.5 cups)
  • 2 tablespoons agave syrup
  • ~4-8 ice cubes

Instructions

  • Use a mojito muddler to muddle the peach in a cocktail shaker until it turns into a chunky puree. Add the rest of the ingredients and shake well. Strain into 2 glasses, add ice, and serve!

Notes

Make vanilla bourbon by soaking a vanilla bean in a bottle of bourbon for at least 24 hours.
Note: to make the most out of a vanilla bean, slice it in half and use a knife to gently scrape off the seeds from both sides. Use the seeds for baking or pancakes. Use the vanilla bean halves for soaking in bourbon.
