Savory and sweet grilled cheese

Here in the Babaganosh household, I love sneaking fruit into places it doesn't belong, like sandwiches or crostini. I was OBSESSED with this Pear and Goat Cheese Grilled Cheese sandwich so much that I decided to experiment with more goat cheese grilled cheese recipes.

Blackberries seemed like the perfect berry/fruit to add to grilled cheese! Just imagine all the little bursts of fresh blackberry juice as you bite into the warm, ooey gooey melted goat cheese sandwich... so good!

Goat cheese grilled cheese

If you've never had a grilled cheese made with goat cheese, I hope you get to try it! It's a totally different taste experience than a regular grilled cheese because goat cheese is a spreadable cheese that softens as it warms up, and it doesn't quite melt like other cheese you might be used to.

In order to make a "meltier" experience, I spread goat cheese and whipped cream cheese on bread to make a creamier cheese mixture.

Air fryer grilled cheese

If you don't want to bother with a hot pan on a hot summer day, you can make grilled cheese in the air fryer! Each air fryer is a little different, but I've had good luck with air frying at 350F for about 6 minutes. Definitely check your air fryer instruction manual for grilled cheese directions, and check on the grilled cheese sandwich in the air fryer as it is cooking to make sure it does not burn.

Ingredients

  • 4 slices bread
  • Butter (about 2 tablespoons—½ tablespoon per slice of bread) - use salted butter for a sweet & salty flavor combo
  • 4 oz goat cheese (crumbled or in a log)
  • 4 oz whipped cream cheese (for a sweeter grilled cheese use strawberry flavored whipped cream cheese)
  • 6 oz blackberries, rinsed and patted dry

Don't have whipped cream cheese? Use 2 oz of regular cream cheese and melt it for just a few seconds in the microwave to soften it and make it easier to mix with the goat cheese and spread.

Instructions

Step 1: Spread butter onto one side of each slice of bread.

Step 2: In a bowl, mix the goat cheese and whipped cream cheese together.

Step 3: In another bowl, mash the blackberries.

Step 4: Spread the goat cheese mixture onto on slice of bread on the non-butter side.

Step 5: Spread the mashed blackberries onto the other slice of bread.

Step 6: Place slices of bread together to create a sandwich, butter side up.

Step 7: Stovetop instructions: Heat a large skillet to medium-low heat. Place the sandwiches on the pan, cover, and cook for 5-7 minutes per side, or until the bread is toasted golden brown and and the cheese is melty and softened inside. Keep an eye on the bread to make sure it does not burn.

Air fryer instructions: Preheat air fryer to 350F. Air fry for about 6 minutes, or until the cheese is melty and softened and the bread is golden brown. Keep an eye on the bread to make sure it does not burn.

Goat cheese grilled cheese add-ins

This basic goat cheese grilled cheese is pretty amazing as it is, but here are a few ideas for tasty add-ins:

  • Drizzle of honey (or spicy honey!)
  • A sprinkle of red pepper flakes or cayenne pepper for spice
  • Drizzle of balsamic glaze or a few drops of balsamic vinegar
  • Pinch of cinnamon
  • Swap some of the cheese for shredded gruyere or thin slices of brie
  • Finely diced basil or mint leaves
