How to make cinnamon coffee cake muffins
These cinnamon muffins are pretty easy to make - they follow the typical steps to make standard muffins, but have the one extra step of making the crumb topping (more on that below!)
Start by lining your muffin pan with muffin liners and preheating the oven to 375 degrees Fahrenheit.
Then mix the dry ingredients in one large bowl and whisk the wet ingredients together in another bowl.
Add the wet ingredients to the dry ingredients and mix together until just combined.
Fill your prepared muffin pan about ⅔ of the way with the batter.
Now onto the crumb topping!

To make the crumb topping, you simply combine ⅓ cup each white sugar and brown sugar, 2 teaspoons cinnamon, ¼ teaspoon salt, ½ cup melted butter, and 1½ cups flour.
Spread out the cinnamon crumb topping on a large baking sheet lined with parchment paper (for easier cleanup!). Spreading it out ensures that the crumb topping stays crumbly when you add it to your muffins.
Top the batter of each muffin with crumb topping, gently pressing the crumb topping into the batter so it sticks and sinks in.
Bake the muffins for 15-17 minutes at 375 degrees Fahrenheit, or until a toothpick inserted into the center comes out clean.

Coffee Cake Muffins
Ingredients
- 1½ cups All-purpose flour
- ½ cup Brown sugar - , packed
- 2 teaspoons Baking powder
- 1 teaspoon Cinnamon
- ¼ teaspoon Baking soda
- ¼ teaspoon Salt
- ¾ cup Milk
- ⅓ cup Vegetable oil - or coconut oil
- 2 Eggs
- ⅓ cup Sugar
- ⅓ cup Brown sugar
- 2 teaspoons Cinnamon
- ¼ teaspoon Salt
- ½ cup Unsalted butter - melted (1 stick)
- 1½ cups All-purpose flour
Instructions
- Prepare the crumb topping: Combine the sugar, brown sugar, cinnamon, and salt in a medium bowl. Whisk in the melted butter. Add the flour and mix until combined. Spread out crumb topping mixture onto parchment paper lined cookie sheet. Set aside.
- Preheat oven to 375 degrees Fahrenheit. Line a 12-cup standard muffin tin with muffin liners, set aside.
- In a large bowl, combine the flour, brown sugar, baking powder, cinnamon, baking soda, and salt. Mix well.
- In another bowl, whisk together the milk, oil, and eggs. Pour wet mixture over dry ingredients and mix until just combined.
- Fill muffin cups about ⅓ full and sprinkle some crumb topping (use about half the crumb topping here). Fill the muffin cups ⅔ full. Add the remaining crumb topping and press gently into the batter.
- Bake for 15-17 minutes at 375 degrees Fahrenheit. A toothpick inserted into the center should come out clean.
