Cottage Cheese Avocado Toast

Cottage cheese + avocado

I work from home, so most of the time I do not meal prep my lunch in advance and I am scrambling for a quick and healthy lunch that will keep me full. 

Most days lunch includes some kind of toast (tomato toast, avocado toast, cottage cheese toast), some kind of vegetable or salad to go with that, and some kind of protein. So I thought... why not combine all that together into one filling meal?? Why not combine cottage cheese with avocado?

It's a great combination! Cottage cheese is loaded with protein, and some brands even have live and active cultures (probiotic!). Avocado has fiber and healthy fats. All that on whole wheat toast, which adds more fiber and plant protein. And last but not last - these ingredients are delicious together! The avocado gets a little flavor boost from lemon juice and salt, and it pairs nicely with creamy cottage cheese.

Some recipes for cottage cheese avocado toast call for mashing the two ingredients together, but I really prefer keeping the avocado and cottage cheese separate and spreading them on in two layers. It looks prettier and frankly tastes a little better to me since I can tell both ingredients apart as I bite into the toast.

Ingredients

  • 2 slices whole wheat bread (or your favorite bread)
  • ½ cup cottage cheese, or as much as you like
  • 1 Hass avocado (I use half of a small avocado per slice of toast)
  • ½ - 1 teaspoon lemon juice
  • ⅛ teaspoon salt, or to taste
  • everything bagel seasoning, smoked paprika, chopped chives or herbs (or other toppings of your choice, see below for ideas)

Instructions

In a small bowl, mash together the avocado with lemon juice and salt. Use more salt if your toppings won't contain salt, use less salt if you'll be using a lot of everything bagel seasoning or other salted seasoning.

Note: If you prefer, you can slice the avocado instead of mashing it. Either way, please add lemon juice or lime juice and salt to make the avocado tastier!

Toast your bread. Spread about ¼ cup of the cottage cheese on top of the bread. Spread the avocado mixture on top of the cottage cheese. Top everything bagel seasoning, smoked paprika, and fresh herbs. Add any other toppings you might like and enjoy!

Topping ideas

You can mix and match toppings on your avocado cottage cheese toast. Try pairing a smoky or spicy seasoning with a sweet drizzle, or floral herbs with briney pickles or olives.

Recipe tips

This "recipe" is definitely super easy, but here are a couple of tips anyway:

  • Don't prep it ahead of time, the bread will get soggy. And the avocado will turn brown. If you really must prep it ahead of time, then place plastic kitchen wrap over your bowl of mashed avocado, pressing down the plastic wrap into the avocado so there is no air in the bowl. This will keep it from browning. This is also a good way to save mashed avocado from turning brown, if you have any extra left over after making your toast.
  • If your cottage cheese has a lot of whey, strain it out so it doesn't get the bread soggy.

If you're a fan of cottage cheese and avocado, then this toast will be a hit! Don't skip the everything bagel seasoning.
