Instructions
Step 1: In a large bowl, microwave the chocolate chips in a microwave safe bowl for about 1 minute, stopping and stirring every 15 seconds. Continue until everything is nice and melted.
Step 2: Stir in powdered sugar and peanut butter (Hint: spray the measuring cup before adding peanut butter to it, it will come out easily!). Mix until everything is smooth.

Step 3: Pour in the chow mein noodles. Stir and fold in gently using a silicone spatula until everything is well mixed and coated.

Step 4: Spray a standard 12 muffin tin with non stick cooking spray. Wipe each muffin tin with a paper towel to make sure it’s not too oily in them.
Step 5: Spray a rounded tablespoon with cooking spray, scoop some of the chow mein mixture and drop it into the tins. Press down to make a dip in the middle like a nest. Repeat until the muffin tin is full, spraying the spoon as needed to keep the chow mein mixture from sticking to it.

Recipe tips
→ Chow mein noodles are available in most large grocery stores in the Asian aisle, or on Amazon. They're crispy pre-cooked noodles that are used to top soups and salads, they're not uncooked noodles. If you really can't find chow mein in a store and don't want to order online, you can substitute with crunchy corn flakes, though it won't be quite the same.
→ No large microwave-safe bowl? You can melt the chips in a medium microwave-safe bowl, then transfer to a large bowl (use a silicone spatula to make sure you get every last bit of melted white chocolate). Alternatively, you can melt the white chocolate chips on the stove using the double boiler method.
→ Use high quality white chocolate chips instead of white chocolate melting wafers, it makes for better-tasting Easter treats!
