Ground pork tacos
We often cook with ground pork because of our son's beef allergy, and we're actually LOVING all the ground pork recipes we've been "forced" to try. These ground pork tacos with pineapple salsa are one of our favorite 15 minute dinner recipes - they're super tasty and easy to make.
I've made these tacos with store-bought taco seasoning mix, and I've made my own taco seasoning. They come out delicious either way!

Here's what you need to make these tacos:
- 1 small onion, finely minced
- 2 cloves garlic, finely minced
- ½ tablespoon olive oil
- 1 lb ground pork
- 2 tablespoons taco seasoning - 1 small package (see below for a homemade taco seasoning that makes just enough for this recipe)
- Salt and pepper, to taste (check your taco seasoning - you might not need to add any more salt or spice!)
- Lime juice
And of course, tortillas for serving. You can use corn tortillas for gluten-free tacos, or try these homemade flour tortillas.

Make your own homemade taco seasoning
If you don't want to use store-bought taco seasoning, just add these spices to the ground pork as its cooking:
- 2 teaspoons chili powder
- 2 teaspoons sweet or hot paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- ½ - 1 teaspoon salt**
- ½ teaspoon black pepper, or to taste
**If adding salt to your taco seasoning, don't add any more to the ground pork as it's cooking!

How to make ground pork tacos
Step 1: Start by sautéing your garlic and onion in a large skillet for about 5 minutes. You want to do this first so the onion cooks down a bit and becomes unnoticeable in the tacos. It will give the ground pork a lovely flavor but you won't have any chunky onion bits to worry about.
Step 2: Move the onion aside and add the ground pork to the skillet. Cook over medium heat for about 5 minutes, using your spatula to break up the ground pork.
Drain any juices, if the ground pork releases any. We don't need that to go into our tacos!
Step 3: Add the taco seasoning to the ground pork and mix well. Continue to cook for another 2-3 minutes, until the ground pork is fully cooked and well-seasoned with taco seasoning. Add a squeeze of fresh lime juice and stir.
That's it!! Done!!
Just get your pineapple salsa ready, warm up your tortillas, and enjoy!

Black bean pineapple salsa
Something about sweet, juicy pineapple, hearty black beans, and juicy corn makes this salsa a PERFECT topping for ground pork burgers.
Pork + pineapple were meant to go together, and this little sweet & savory combination makes these tacos absolutely addicting.
This simple black bean pineapple salsa is made with:
- 1 15-oz can black beans (drained and rinsed)
- 1 15-oz can corn (drained and rinsed)
- 1 cup pineapple (finely diced)
- 2 tablespoons red onion (finely minced)
- 2 tablespoons cilantro leaves (roughly chopped)
- 1 tablespoon lime juice (from about half a lime)
- ¼ teaspoon salt and pepper (or to taste)
- ½ fresh jalapeño (or to taste)
Simply mix all the ingredients together in a bowl and spoon over your pork tacos! Or serve as a dip and side dish for tacos or any Mexican-inspired meal!
You can also serve these tacos with pineapple pico de gallo on top!
Low carb pork tacos
We typically eat these pork tacos with corn or wheat tortillas (take a minute to warm up those tortillas! It's so worth it!), but you can absolutely serve these tacos in lettuce leaves for a low carb option.
Of course, if you want keto tacos, you'll need to get another topping for the salsa because black beans, corn, and pineapple have too many naturally-occurring carbs for the keto diet. To keep it keto, try topping these tacos with cheese, freshly chopped onion, radish slices, mayo, or a bit of simple tomato salsa.
Leftover taco meat
Leftover taco meat goes great in quesadillas, in taco pinwheels, or as a topping for a baked potato!

Pork Tacos with Pineapple Salsa
Ingredients
- 1 small onion - finely minced
- 2 cloves garlic - finely minced
- ½ tablespoon olive oil
- 1 lb ground pork
- 2 tablespoons taco seasoning - see notes to make your own
- salt - to taste (optional - see notes)
- 1 tablespoon lime juice
- 6 tortillas - (or 12 if doubling up on the tortillas for sturdier tacos)
- 1 15-oz can black beans - drained and rinsed
- 1 15-oz can corn - drained and rinsed
- 1 cup pineapple - finely diced
- 2 tablespoons red onion - finely minced (or yellow onion or 1 scallion)
- 2 tablespoons cilantro - minced (or more!)
- 1 tablespoon lime juice - (from about 1/2 lime)
- ¼ teaspoon salt and pepper - or to taste
- ½ jalapeño - seeds removed, finely diced (or less or more to taste)

Instructions
- In a large bowl, combine all the ingredients and mix. Season with additional salt, lime juice, or more jalapeño, if desired.
- Heat the olive oil in a large skillet and add the minced onion and garlic. Saute for 5 minutes over medium heat until the onion softens and starts to brown.
- Move the onion to the side and add the ground pork. Cook over medium heat stirring frequently for about 5 minutes, or until the pork is almost cooked.
- Add the taco seasoning (and salt, if using), continue to cook, stirring frequently for 2-3 minutes, or until the ground pork is fully cooked. Squeeze in lime juice and mix well.
- Warm up your tortillas. Spoon ground pork taco filling into each tortilla, and top with salsa. Enjoy immediately!
