Healthy Snack Platter

Yes, I am a bit scared of heights. Why do you ask??

I might have mentioned before that Aldo and I go rock climbing. We both started climbing several years ago, back when we were still just friends (aww, memories). We both used to go to the rock gym several nights a week, though lately it's turned into a Monday night tradition - Monday is 2-for-1 for day passes at our local gyms - and we just don't have time to go more often nowadays. Also, we are lazy and just like to cuddle most nights instead of working out.

Climbing can be an intense workout (depending on much sitting around we do versus actual climbing, haha) and we are usually pretty hungry afterwards. There are days I could honestly eat a second dinner after climbing. Luckily I have Aldo to talk sense into me and stop me from eating everything in sight at 10 o'clock at night. We usually try to make sure we have healthy protein-filled snacks around for moments like that.

This platter of fiber-rich nuts and fruit, yummy cheese, and protein-packed meat snacks from Lorissa's Kitchen definitely hits the spot after a night at the climbing gym. And the awesome part is that it can be put together in under 5 minutes! Here's what I have on the platter:

  • Lorissa’s Kitchen Korean Barbeque Beef (my favorite!)
  • Lorissa’s Kitchen Sweet Chili Pork
  • Lorissa’s Kitchen Szechuan Peppercorn Beef
  • Hazelnuts
  • Pecans
  • Walnuts
  • Dried dates
  • Fresh grapes
  • Fresh blackberries
  • Cheddar cheese
  • Pizza/Marinara flavored cheese (yum, right??)

Just take a handful of each ingredient and arrange it on your platter. Couldn't be easier!

And the beautiful part is that the leftovers get packed into little baggies for us to take to work as snacks the next day. That kind of thing always makes me feel like I am successful at adulting.

The three flavors from Lorissa's Kitchen that we tried - Korean Barbeque Beef, Sweet Chili Pork, and Szhechuan Peppercorn Beef are all super delicious, tender, and just the right amount of spicy, balanced by a bit of sweetness and lots of yummy savory flavor.

I love that all this flavor comes from ingredients that we can find right in our own kitchens (and pronounce!), without any preservatives or MSG. It also helps that Lorissa's Kitchen uses beef and pork that was raised humanely and responsibly.
