Here is my homemade smoked salmon recipe. It is ridiculously easy. The only thing is you need to plan ahead because it takes 2-3 days to cure the salmon to make lox.

Smoked Salmon Zucchini Roll Ups
Make these: Use a mandolin to thinly slice zucchini, season with salt and pepper, then roast, pan-fry, or grill the sliced zucchini for about 15 minutes. Roll up with smoked salmon and fresh dill.
Another option is to add a thin layer of cream cheese (bring it to room temperature first to make it easier to spread).
Smoked Salmon Egg & Avocado Bake
Make these: Preheat oven to 375F. Cut a Hass avocado in two, season lightly with salt and pepper. Add a few slices of smoked salmon and crack an egg in the avocado. Add fresh herbs, such as dill. Season with salt and pepper. Bake at 375F for 10 minutes, or until the egg is set to your liking.
Low Carb Salmon Poke Bowl
Make this: Layer smoked salmon, avocado, and your favorite poke bowl ingredients, such as sliced radishes, cucumbers, cabbage. Serve it over cauliflower rice. Season with a drizzle of sesame seed oil, tamari sauce (it's like a soy sauce but tastier, gluten free, 0 net carbs. You can get it here), sesame seeds (get them here), and chopped scallions.

These recipes are wonderful, Kate! I've been stuck in such a recipe rut, and I've been trying new flavors to get out of it. I've recently centered on smoked salmon as an ingredient I love (I get mine from these guys, fwiw: https://lummiislandwild.com/), but bagels and smoked lox can only get you so far. These ideas are genious!
