Muffin Mix Waffles (Easiest Waffles Ever!)

If you want a super easy 5-minute treat, then you need to grab a package of muffin mix and your waffle maker to make these Muffin Mix Waffles! Two minutes of prep time, two minutes of cook time, and you have the best, easiest, tastiest waffles with the perfect crispy edges and soft fluffy insides. YUM!

Why make muffin mix waffles

  • Ready in 5 minutes! Waffles cook SO MUCH FASTER than muffins without having to turn the oven on. Perfect snack hack for busy moms with hungry kiddos.
  • Easiest prep ever! Just 3-5 ingredients, depending on the type of muffin mix you have.
  • Super crispy edges with soft cake-like interior. You know those liege waffles with the crusty crispy outside that you buy at fancy waffle shops and ski resorts for a million dollars per waffle? Well, store-bought muffin mix packages have just the right amount of sugar to make the waffles super crispy and delish.
  • Batch size: you can use a small muffin mix bag to make just 2 waffles at a time. Or use a larger box to make a larger batch of waffles.
  • So many flavor variations and mix-ins you can add! Start with your favorite package of muffin mix and add sprinkles, chocolate chips, dried berries-whatever you like!
  • A great breakfast, snack, or dessert. I stock up on waffle mix packs whenever they're on sale.

Tips for making waffles from muffin mix

Pretty much every brand of muffin mix can be used to make waffles. There are just a few tricks to make sure they come out right, no matter what kind of muffin mix you buy:

  • Use just a little less liquid for waffles than the muffin mix calls for. So if your muffin mix makes 2 muffins and calls for ½ cup milk, use a scant ½ cup (about 1-2 tablespoons less). This is because the waffles will need to cook in the waffle maker until the liquid evaporates, but you don't want them to cook for too long and get burned on the edges. So less liquid = less cook time = waffles are done faster without burning.
  • Add oil even if your muffin mix does not call for oil. Many muffin mixes call for adding milk, oil, and eggs. If that's the kind you have, follow the instructions but use just a little less liquid (1-2 tablespoons less for every 2 muffins). But if yours is a "just add water" or "just add milk" mix, then substitute some of the water or milk for oil, and use a tiny bit less liquid overall. I love using melted coconut oil to my waffles! 
  • Use a Belgian waffle maker if you have one. The deep pockets in Belgian waffle makers make for deep crispy pockets in the waffles. Thin waffle pans don't quite give the same satisfying crunch as the deeper pan. But ultimately, use whatever waffle maker you have.
  • Try different flavor muffin mixes and see which one you like best. Experiment with "just add milk" mixes and other waffle mixes.
  • Be sure to check on the waffle about 2 minutes into cooking, since these might cook faster than typical waffles. You don't want to burn your delicious waffles.
  • If you don't have a cookie cooling rack, line a plate with a paper towel to absorb moisture that will form under the freshly cooked waffle. That will help keep it crisp on the bottom.

Ingredients

  • 1 package muffin mix (any flavor, use your favorite kind)
  • Ingredients specified on the muffin mix packaging (typically milk, eggs, oil). Be sure to use a tiny bit less liquid than the packaging calls for (1-2 tablespoons less for 2-muffin mixes, 3-6 tablespoons less for 6-muffin packages). If your package does not call for oil to be added, add some neutral vegetable oil or melted coconut oil in place of some of the milk or water anyway. This will make for a crispier edge on the waffles. 
  • Oil sprayer with vegetable oil / baking spray for the waffle maker, or brush on coconut oil with a silicone brush

  • Waffle maker / waffle iron (I prefer a Belgian waffle maker, but use whatever you have!)
  • ¼ cup squeeze release cookie scoop (optional, I use it to scoop the batter into the waffle maker)
  • Baking spray (or use a refillable oil sprayer with vegetable oil, or brush on coconut oil with a silicone brush. Note: some waffle makers specify NOT to grease or oil the pan, so please follow your waffle maker's instructions)
  • Large bowl
  • Measuring cups
  • Cookie cooling rack or plate lined with a paper towel

Instructions

Prepare the waffle batter according to the instructions of your muffin mix, but use a little less liquid overall and a few tablespoons of oil even if your mix does not specify to. This will help the waffles cook faster and become crispy without burning.

Preheat your waffle maker. If your waffle maker instructions say to spray or brush vegetable oil onto the waffle iron after it is hot, go ahead and do that.

Scoop the waffle batter onto the hot waffle iron using a rounded ¼ cup of batter. You can use as much as needed to make the full waffle, or use ¼ - ½ cup to make a waffle with irregular edges like I did here.

Cook according to your waffle maker's instructions (flipping the waffle if your waffle maker requires it), but cut the cook time shorter by 1-2 minutes. Waffles typically cook in about 3 minutes, and you can tell they're done when the steam stops escaping or has slowed down a lot. Muffin mix waffles cook as fast as 2 minutes because they have less liquid. Be sure to check that the waffle is not burning!

Use a fork or tongs to remove the cooked waffle onto a cooling rack or plate and cook the rest of the waffles. 

Serve warm, with your favorite toppings (pat of butter, maple syrup, whipped cream, scoop of vanilla ice cream, berry sauce, etc.).
