Pickle Pizza with Garlic Parmesan Crust

Pickle lovers, this one's for you. This Dill Pickle Pizza has a decadent combination of three cheeses with a dilly white sauce, an amazing garlic-Parmesan-dill crust, and of course-lots of pickles!

I just can't get enough of the pickles + cheese combination! Briny pickles tastes so good when paired with creamy salty melted cheese. My cheddar pickle chips recipe is one of the most popular ones on my site and I always add pickles to grilled cheese now. So with that, I bring you this pickle pizza.

What we have here is a white pizza with dill pickles. I don't use tomato sauce in this pizza because it is too acidic and won't pair well with pickles. Instead, I top the pizza dough with thin layer of homemade white pizza sauce that is flavored with dried dill and garlic powder. The sauce is made from sour cream and mayo instead of ricotta, so it is thin-just enough to add a little flavor and creaminess to the melted cheese.

Feel free to add as many pickle slices as your heart desires. I used 2 large pickles for a large pizza, but honestly, I would be okay with double the pickles! The amount of pickles is totally up to you.

Before baking, I brush the crust of this pizza with a flavorful mix of garlic powder, dried dill, and Parmesan in olive oil. It is SO GOOD, so please don't skip that step!

Ingredients

  • 1 large prepared pizza dough (about 1.5 pounds of pre-made dough. I usually pick up dough from a local pizzeria to save time)
  • 3 tablespoons sour cream
  • 2 tablespoons mayo (I use a combination of sour cream and mayo for the sauce because mayo by itself is too greasy, and sour cream by itself is a little too "creamy" tasting. Together, they make an amazing sauce for white pizza!)
  • 2 tablespoons finely grated Parmesan, divided
  • 1 teaspoon dried dill (dillweed), divided
  • 1 teaspoon garlic powder, divided
  • salt, optional
  • 1.5 - 2 cups grated cheese, I use a combination of mozzarella and Gruyere or Havarti
  • 2-4 large dill pickles, to taste, thinly sliced and patted dry with a paper towel
  • 1 tablespoon olive oil
  • fresh dill for garnish

Equipment

  • Large pizza stone OR 1 large baking sheet (13 x 17 inches) OR 2 medium baking dishes
  • Measuring cups and spoons
  • Basting brush
  • Optional: rolling pin (I stretch the dough in the pan without using a rolling pin)
  • Optional: parchment paper (I use it to make sure the pizza never sticks to the baking sheet without needing any cornmeal)

Instructions

Preheat oven to 425F. Line a large baking sheet with parchment paper.

Gently stretch out the pizza dough to fill up your baking pan (or two medium baking pans), making sure to keep the dough even thickness.

In a medium bowl, stir together 3 tablespoons sour cream, 2 tablespoons mayo, 1.5 tablespoons Parmesan, and ½ teaspoon teaspoon each dried dill and garlic powder. If you like, stir in a little salt. Spread a thin later of this mixture over the pizza dough, leaving about ¼ - ½ inch around the edges.

Spread the shredded cheese over the white sauce. Place pickle slices on top of the cheese. Make sure they are as dry as possible.

In a small bowl, combine 1 tablespoon olive oil with ½ tablespoon Parmesan and ½ teaspoon each garlic powder and dried dill. Brush this mixture on the edge of the pizza.

Place the pizza in the oven and bake at 425F for 11-14 minutes, or until the crust is golden brown and cooked through and the cheese is melted. Remove from heat and garnish with fresh dill.

Allow the pizza to cool for 5 minutes, then slice and enjoy!

Recipe variations

  • You can use a more traditional white pizza sauce made with ricotta, if you prefer.
  • The mixture for brushing the crust can be stirred together with melted butter instead of olive oil.
  • Try using garlic aioli in place of mayo.
  • Try adding cubed ham to the pizza! Ham and pickles are delicious together.
  • Add a drizzle of hot honey before serving. This isn't for everyone, but it's a great combination on pizza!
  • Any store-bought or pizzeria-bought pizza crust works fine here. If, for some reason, your pizza dough comes with very different baking directions than mine, then use the directions on the packaging. You can make a quick homemade pizza dough using instant yeast, like I do in the recipe for my Greek pizza. This pizza crust does not require a long rising time. Or you can make a 2-ingredient pizza crust from self-rising flour and plain Greek yogurt, like I do in my pesto pizza. This gives a nice tangy pizza dough flavor which pickle-lovers might enjoy!
