Easiest Protein Mug Brownie

This Protein Mug Brownie (aka microwave brownie) is incredibly chocolatey, fudgy, rich, delicious... and best of all it's high in protein, low in sugar, and super easy to make in 2 minutes!

Protein brownies

Naked Nutrition sent me their latest product: this protein brownie mix. It makes really great protein brownies! But... some days I don't have my life together enough to bake a pan of brownies.

That's when this 2-minute microwave protein brownie recipe comes in! It's a super tasty single serving brownie for when I need a little more protein in my day and want a treat.

It's perfect for when we get home from the climbing gym at 10pm, are ravenously hungry, and need some protein for recovery after a hard workout.

Just add water, microwave for 1 minute, and voila! A super fudgy protein brownie mixed and "baked" in one mug.

I love these protein mug brownies because:

  • They're undeniably fudgy and rich (just look at the picture below this list!)
  • They have 15 grams of protein per serving
  • They don't have any unnecessary ingredients 
  • They have only 9 grams of sugar
  • They are super delicious!!

Ingredients & supplies

  • 2 scoops Naked Brownie protein mix
  • 1 scoop water
  • Optional: mini chocolate chips
  • Optional: powdered sugar for topping
  • Microwave-safe mug (6 oz or larger)
  • Fork or small whisk

Instructions

Step 1: Combine the protein brownie mix and water in a mug and whisk together until completely mixed and no lumps remain. Optional: add a few mini chocolate chips on top. Tip: Wash and dry the plastic scoop thoroughly before placing back into the brownie mix container.

Step 2: Microwave for about 1 minute, or until the brownie rises and the top of the brownie is no longer raw or wet. KEEP AN EYE ON THE BROWNIE IN THE MICROWAVE to make sure it does not overflow, if your mug is small. If you see the mug brownie overflowing, stop the microwave for a few seconds, then continue cooking.

Step 3: Enjoy immediately! Sprinkle with powdered sugar on top if you like, and dig in with a fork or spoon.

Microwave brownie tips

→ Use a mug that is at least 6 oz to make sure the brownie batter doesn't overflow as it expands. 8 oz is better. You can also use a microwave-safe bowl or ramekin that is 6+ oz.

→ Microwave strengths vary, and the exact cook time you need will depend on lots of things (microwave, size of mug, temperature of water, etc.). My microwave strength is 1000 watts and I use the high power setting, and the brownie is consistently perfectly baked after 1 minute. Your brownie might be done as early as ~45-50 seconds or might take as long as 1:30. Do NOT overcook it or it will be dry and crumbly. 

→ DO NOT TAKE YOUR EYES OFF THE MICROWAVE if you're using a small mug. If you see the brownie rising while it cooks and starting to overflow, just open the microwave door, wait a few seconds for it to deflate a little, then continue microwaving. 

→ The chocolate chips you add at the beginning will mostly sink to the bottom during cooking (such a delicious last bite!!). If you want some chocolate chips on top, just pause the microwave at 30 seconds, add a few chips on top, then continue microwaving.
