This apple cake might look absolutely stunning and extravagant, but it's actually super easy to make.
This is a one-bowl cake recipe, and the caramel toffee sauce that goes into the cake and gets drizzled on top is super quick to make as well.
This wonderful apple cake is fancy enough to serve for the holidays (I guarantee you people will be asking you for the the recipe!), but is also an easy enough recipe to make on a weeknight when you want to make something special for your family with all those apples you might have leftover from apple picking.

This cake is super customizable:
- Don't like cinnamon? Skip it.
- Want extra apple spice goodness? Add extra cinnamon or even some pumpkin spice!
- Don't like almonds? Skip them. Although I really love how they come out all toasted on top.

Ingredients
This cake looks fancy but the ingredient list is quite short:
For the caramel toffee sauce:
- 1 Cup dark brown sugar
- 1 Stick butter (8 tablespoons, or 4 oz)
- ½ Cup heavy cream (double cream)
For the apple cake:
- 2 Cups chopped peeled apples (from 2 small apples)
- 2 Eggs
- Vanilla Extract
- 2 Cups all purpose flour (you can absolutely use white whole wheat flour or substitute 1 cup with regular whole wheat flour!)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- Ground cinnamon (optional, but tasty! Use 1-2 teaspoons, or more to taste)
- ¼ teaspoon salt
- 2 Tablespoons chopped almonds (optional, but tasty!)

How to make Toffee Apple Cake
Start by making the toffee sauce. It's super easy to make, just combine butter and sugar in a small saucepan until melted, then stir in heavy cream.
Then make the apple cake:
Combine the liquid ingredients (eggs, some of the toffee sauce (save some for the drizzle!), and vanilla extract in a bowl).
Sieve the dry ingredients into the same bowl.
Mix the batter. It will be quite thick (see below). Then stir in the chopped apples.
Transfer the batter into your baking pan. Top with almonds (if using).
Bake. 350 degrees Fahrenheit for 1 hour, or until a toothpick inserted into the center comes out clean.
Drizzle with toffee sauce after the cake cools.

Tips and variation ideas:
- Use chopped pecans or walnuts instead of almonds, if you like
- Add extra chopped nuts into the batter for a lovely crunch throughout
- Add more spice with extra cinnamon or pumpkin spice... or skip the cinnamon!
- Use white whole wheat flour instead of all purpose flour, or substitute half the flour with regular whole wheat flour.
- Make a salted caramel toffee sauce - add a pinch of salt to the remaining toffee sauce that will be used as the drizzle. Don't add salt to the whole batch of toffee sauce, since most of it will be going into the cake. You don't want a salty apple cake!
- Turn this into cupcakes - bake for ~17-22 minutes, or until a toothpick inserted into the center comes out clean

Apple Toffee Cake
Ingredients
- 1 cup Dark brown sugar
- 8 tablespoons Butter - (110 grams or ½ cup or 1 stick)
- ½ cup Heavy cream - (double cream)
- 2 Eggs
- 1 teaspoon Vanilla extract
- 2 cups All purpose flour - (see notes)
- 1 teaspoon Baking powder
- 2 teaspoons Ground cinnamon - (Optional)
- ½ teaspoon Baking soda
- ¼ teaspoon Salt
- 2 cups Chopped peeled apple - (about 2 small apples)
- 2 Tablespoons Chopped almonds
Special equipment
- 9 inch round cake pan
Instructions
- Preheat oven to 350 degrees Fahrenheit (180 Celsius). Grease a round 9-inch cake pan.
- Melt the brown sugar and butter in a small saucepan over low heat. Stir occasionally to allow the sugar to melt completely. Cook for about 5 minutes over low heat and allow the sauce to thicken a little (but don't let it burn!)
- Take the pan off the heat and add in the heavy cream. Stir until the cream is fully combined. Allow to cool to room temperature.
- In a large bowl, whisk the eggs until they get frothy. Reserve ¼ cup of the toffee sauce and add the rest into the bowl. Whisk and add the vanilla extract.
- Sieve the flour, baking soda, baking powder, cinnamon, and salt into the bowl.
- Fold the dry ingredients into the wet using the spatula until all the flour is combined. Add the chopped apples and mix it in with the batter.
- Transfer the batter to a greased 9-inch cake pan. Top with chopped almonds.
- Bake at 350 degrees Fahrenheit for 1 hour, or until a toothpick inserted into the center comes out clean. Allow to cool to room temperature, then drizzle with reserved toffee sauce over the top, and enjoy!
