Aldo and I just came back from an amazing long weekend trip to the Finger Lakes region. It's such a beautiful area in upstate NY with more nature, good food, and wineries that you can handle in one weekend. I can't wait to go back.
When we got home, we didn't want to let go of the relaxing summer vibes, so I made this watermelon salad to get us out of the post-vacation slump.
How to Make This Easy Watermelon Salad Recipe:
The Honey Lime Mint Dressing starts with muddling the fresh mint leaves to release their juices - just like you would for a mojito. I love my mojito muddler and use it for lots of recipes other than just mojitos - it is also perfect for mashing avocados for guacamole and mashing chickpeas. SO much easier than using a fork! Here is the muddler that I have. It is inexpensive and gets the job done.
Once the mint leaves are muddled, you will add the honey, lime juice, and lime zest and mix well. Then add the cubed watermelon and stir. The salad is ready to eat! Or you can chill it in the fridge until serving it.
I definitely recommend using freshly squeezed lime juice to get the freshest flavor. And take a minute to zest the limes before you juice them, it will make for a more fragrant citrusy dressing. I have this citrus squeezer from oxo that I LOVE and this zester which makes it super easy to zest limes and lemons.
This watermelon salad is best served fresh the same day, but you can store leftovers in the fridge until the next day, if you need to.
You can also scale this recipe up to make a large salad for a crowd. It's great for picnics, summer entertaining, or just a refreshing salad to enjoy with your family on a hot summer day.

Watermelon Salad with Honey Lime Mint Dressing
Ingredients
- 2.5 - 3 lb seedless small watermelon - , cubed (about 6 cups)
- 1/4 cup fresh mint leaves - , chopped
- zest of 1 lime
- Juice of 1/2 lime - (about 1 tablespoons)
- 1 tablespoon honey
Instructions
- Place the chopped mint leaves in a large bowl and muddle them with a mojito muddler or a fork. Add the lime zest, lime juice, and honey and mix well. Add the watermelon and toss gently. Serve chilled.

This sounds amazing! I love me some watermelon and never thought to do this!
I have put shredded coconut on my watermelon before and it was delish, but this sounds even better. I need to try this before they are no longer in season!

Shredded coconut sounds like an awesome addition to watermelon. I've had a Filipino fruit salad that a coworker made and it had generous amounts of coconut, it was SO good!
