Preheat oven to 250F. Line a large baking sheet with parchment paper.
Wash and dry the kale thoroughly (using a salad spinner, if you have one, or spread it out on a paper towel and allow to dry for at least an hour). The kale has to be dry to ensure crispy kale chips.
Tear the kale leaves into 1-2 inch pieces and discard the stems.
In a large bowl, combine the kale leaves with the oil, salt, and Cajun seasoning and massage the oil into the kale leaves, making sure to spread the seasoning all around.
Arrange the kale on the baking sheet in a single layer and bake for 25-30 minutes, tossing halfway, or until the kale chips are crispy. Allow to cool for 1-2 minutes and enjoy!
Notes
Check whether your Cajun seasoning has salt in it. If it does, add less salt to these kale chips.
Cajun seasoning can be very spicy! Add a little bit at first, mix together, and taste it before adding a whole teaspoon to the kale chips.
