In a medium bowl, mix all the dry ingredients together with a whisk. Add all the wet ingredients including the food coloring and mix well to combine.
Divide the batter into two small microwave-safe mugs and microwave for 1 minute each.
Once done, test the mug cake with toothpick for doneness. Let the mug cake cool for 10 minutes. Optional: scoop out a little bit of cake from the top to use as garnish on top of whipped cream. Top with whipped cream, garnish with cake bits, and enjoy.
