Fruity, gingery, refreshing, and delicious! These Blueberry Moscow Mules are the perfect drink any time of the year. Made with fresh or frozen blueberries!
Optional garnish: fresh lemon or limeor fresh mint or basil leaves
Instructions
Make the blueberry syrup: Combine all the blueberry sauce ingredients in a small saucepan, stir, and cook over medium heat stirring frequently for about 15 minutes, or until the mixture turns syrupy. Remove from heat and allow to cool. Optional: use an immersion blender to puree until smooth, but I like the blueberry pieces in my drink so I leave it as-is.
Fill two copper mugs with ice. To each mug, add ½ cup ginger beer, 2 tablespoons blueberry sauce, ½-1 tablespoon lemon or lime juice, 1 shot vodka. Stir well, garnish with lemon, lime, or mint or basil leaves. Enjoy your blueberry Moscow mules!
Notes
Blueberry sauce tips:
You might not need any sugar if you have really sweet blueberries. If you have frozen or wild blueberries you might need to add more sugar. Allow the syrup to cool a bit.
Use leftover blueberry sauce on pancakes, crepes, ice cream, cottage cheese, yogurt. Stir it into overnight oats, smoothies, or make blueberry mojitos with it.
The sauce keeps well in the fridge for a couple of weeks, so you can double the sauce recipe if you want.
Shortcuts:
Use store-bought blueberry preserves instead of homemade sauce.
Make the blueberry sauce in advance and have it ready in the fridge.
Taste tips: I always start with a little less vodka and lemon juice, then add more to taste.
