These cute mini breakfast sandwiches with fried quail eggs make a fun special breakfast or brunch! Read the notes below the recipe for ideas for what to serve with these. This recipe makes 8 sandwiches can be scaled up or down as needed.

Ingredients
16Eggo Minis(four 4-piece mini waffles, do NOT break them up yet)
8breakfast sausage patties
8mini potato hash browns(such as McCain Baby Cakes)
8quail eggs
2slicesAmerican cheeseor cheddar cheese, cut into quarters
cooking spray or olive oilfor cooking
Instructions
Grab your ingredients.
Cook the sausage and hash browns according to package directions. You can do this in 2 pans, or make them in the oven. Frozen breakfast sausages typically need 7-8 minutes of cook time in a pan, flipping halfway, with a splash of water added to the pan. Frozen hash browns typically need about 15 minutes in a pan.
Keep them warm: Preheat oven to "keep warm" or to 300F. Once both the sausage and hash browns are fully cooked, transfer them to a baking sheet and place in the oven to keep them warm. If you don't want to bother with an oven, transfer the cooked sausages and hash browns to a plate and cover to keep warm. Wipe one or both of the skillets clean for the next step to fry quail eggs.
Fry the quail eggs: Spray or brush a skillet with oil, then fry the quail eggs over medium-low heat sunny side up until the whites are cooked. You can cover with a lid to help them cook faster.
Toast the waffles according to instructions. Once they are cool enough to the touch, break each one up into 4 mini waffles.
Assemble the sandwiches: Top each mini waffle with a cooked sausage patty, quarter slice of cheese, hash brown, then a quail egg. Place another mini waffle on top.
Notes
No quail eggs? If you can't find quail eggs, use chicken eggs: Scramble eggs and season them with salt and pepper, then cook them like an omelet (without folding in half). Remove from the pan, and use a round cookie cutter (or narrow cup) to cut into circles and place on these mini breakfast sandwiches.Serve with cut up fruit, berries, yogurt. Or make a breakfast spread and add scrambled eggs, toast, butter, jam, cheese slices, etc.Calories are estimated for 1 mini breakfast sandwich, but will vary depending on the exact brands you use.
