This might not be the prettiest, but it is certainly the tastiest griddle breakfast you'll ever have! Just a few ingredients to make these awesome Blackstone hash browns, bacon, egg, and cheese.
Add your hash browns in a thin layer. Season the hash browns with salt and pepper. Allow the hash browns to crisp on one side and then flip. You want to get a nice crust on these hash browns.
While the hash browns are cooking, if you have room on your Blackstone, lay down your bacon and cook on both sides until crispy.
Once the hash browns are cooked and crispy on both sides, make some room in the center where you'll cook the eggs. Lower the heat or turn the heat off completely.
Add the eggs and cook them to your liking, either sunny side up, easy over, or scramble them right there on the griddle. Season with salt and pepper.
Place the bacon on top of the hash browns and eggs.
Add the shredded cheese and let it melt. Divide into 4 portions, transfer to a plate, and enjoy!

To use fresh potatoes: Peel your potatoes, then shred the potatoes on the large side of a box grater. Once the potatoes are shredded, wrap them in a clean kitchen towel or a cheesecloth and wring out the all the extra liquid. The moisture in the potatoes needs to come out so that you have crispy hash browns!For a healthier variation: Use freshly grated sweet potatoes, turkey bacon, reduce the butter, and reduce the cheese and salt.
