This cinnamon-spiced Toffee Apple Cake is super easy to make and is perfect for Fall baking! Make this easy Apple Cake for the holidays, or for a special cozy dessert for the family. The caramel toffee drizzle is AMAZING!
Preheat oven to 350 degrees Fahrenheit (180 Celsius). Grease a round 9-inch cake pan.
Prepare the toffee sauce:
Melt the brown sugar and butter in a small saucepan over low heat. Stir occasionally to allow the sugar to melt completely. Cook for about 5 minutes over low heat and allow the sauce to thicken a little (but don't let it burn!)
Take the pan off the heat and add in the heavy cream. Stir until the cream is fully combined. Allow to cool to room temperature.
Make the cake:
In a large bowl, whisk the eggs until they get frothy. Reserve ¼ cup of the toffee sauce and add the rest into the bowl. Whisk and add the vanilla extract.
Sieve the flour, baking soda, baking powder, cinnamon, and salt into the bowl.
Fold the dry ingredients into the wet using the spatula until all the flour is combined. Add the chopped apples and mix it in with the batter.
Transfer the batter to a greased 9-inch cake pan. Top with chopped almonds.
Bake at 350 degrees Fahrenheit for 1 hour, or until a toothpick inserted into the center comes out clean. Allow to cool to room temperature, then drizzle with reserved toffee sauce over the top, and enjoy!
Tips and variation ideas:
Use chopped pecans or walnuts instead of almonds, if you like
Add extra chopped nuts into the batter for a lovely crunch throughout
Add more spice with extra cinnamon or pumpkin spice... or skip the cinnamon!
Use white whole wheat flour instead of all purpose flour, or substitute half the flour with regular whole wheat flour.
Make a salted caramel toffee sauce - add a pinch of salt to the remaining toffee sauce that will be used as the drizzle. Don't add salt to the whole batch of toffee sauce, since most of it will be going into the cake. You don't want a salty apple cake!
Turn this into cupcakes - bake for ~17-22 minutes, or until a toothpick inserted into the center comes out clean
