A fun, healthy cottage cheese dessert (or snack!), this pink whipped cottage cheese with dragon fruit powder is super easy to make in 2 minutes, is high in protein, low-carb, and loved by the whole family!!
Add all the ingredients to a food processor, and pulse until combined. Then process until smooth and pink. Give it a taste, and add more maple syrup or dragon fruit powder, if you like!
Notes
Use any kind of cottage cheese that you like - fat-free, low-fat, 4%, salted, or unsalted. I prefer the unsalted kind!
Use any sweetener you like - maple syrup, honey, sugar, agave syrup, or a keto-friendly sweetener such as monkfruit sweetener
Make it a parfait, by layering granola, fruit, and cottage cheese
Blend in a packet of gelatin and let it set in the fridge for a couple of hours. Full disclosure: I do NOT like this with gelatin, I prefer the fluffy texture versus the set jelly-like texture. But one reader who makes my pumpkin whipped cottage cheese on the regular says she loves adding gelatin. So... worth a try? Maybe?
