Instructions
Preheat your oven to 400° Fahrenheit. Grab a large baking sheet and drizzle or spray it with olive oil.
Add the sliced peppers, sliced onion, and shrimp to the baking sheet.
In a small bowl, combine the ingredients for the fajita seasoning. Season the shrimp and vegetables with the fajita seasoning and use your hands to mix the seasoning well into the shrimp & veggies.
Cook your shrimp fajitas for 9-10 minutes in the oven, or until the shrimp is pink and fully cooked. Remove from oven, and squeeze several lime wedges all over the pan.
Warm your tortillas before serving. Serve the shrimp fajitas in the warm tortillas, garnishing with cilantro leaves and any other garnishes (see ideas below).

Spice note: Store-bought Fajita seasoning is typically not very spicy, but check the ingredients on the label and give it a taste if you are concerned about spice levels. If it is a little too spicy, then reduce the amount of seasoning and substitute with additional salt and sweet paprika for flavor.
