Try these crispy roasted chickpeas one of four ways: Garlic Parmesan Roasted Chickpeas, Honey Roasted Chickpeas, BBQ Roasted Chickpeas, or Taco Roasted Chickpeas.... or make all four flavors!
1tablespoontaco seasoning + 1 teaspoon lime juice + salt(salt to taste, omit if your taco seasoning is salty)
1tablespoongrated Parmesan cheese + ½ teaspoon garlic powder
Instructions
Drain and rinse the chickpeas, and pat dry with a paper towel, or allow to dry at room temperature for at least 30 minutes.
Preheat oven to 400F and line a large baking sheet with parchment paper.
Spread the dried chickpeas on the parchment paper, and roast at 400F for 25-30 minutes, or until the chickpeas are golden brown and shrink in size.
Drizzle the olive oil over the chickpeas, add your seasoning of choice, and mix well.
Roast at 400F for 15-20 minutes, shaking the chickpeas every 5-10 minutes.
Allow to cool, and enjoy. Store the roasted chickpeas at room temperature in a closed container (such as a Mason jar) for 4-5 days.
Notes
If you want to make several flavors at once, I recommend putting each seasoning on a separate baking sheet, so you can mix the seasoning in directly on the sheet pan, and so you can stir the chickpeas easily.
If you want to make them all on one baking sheet at once, you'll need a LARGE baking sheet. The one I used is 11x17 inches and only fit 3 cans of chickpeas.
Other seasoning ideas:
Sriracha ketchup (1 tablespoon ketchup + ½ to 1 teaspoon sriracha)
Nutrition facts are estimated assuming 4 servings from 1 can of chickpeas, and only include the chickpeas and oil without any toppings, since I do not know which topping(s) you will use.
