Ingredients

  • 28 oz can chickpeas , drained and rinsed
  • 1 small bell pepper , chopped (about 1 cup)
  • 1 cup grape tomatoes , chopped
  • 4 oz feta cheese , cubed or crumbled
  • 1/4 cup parsley leaves , chopped
  • 2 tablespoons mint leaves , chopped
  • 1 scallion , chopped
  • 1 garlic clove , minced
  • Juice of 1/2 lime , about 1 tablespoon
  • 2 tablespoons olive oil
  • Salt & pepper to taste (about 1/4 teaspoon each)

Instructions

  • Combine all the ingredients in a large bowl and mix well. Chill for 10 minutes before serving.
