2tablespoonsred onionfinely minced (or yellow onion or 1 scallion)
2tablespoonscilantrominced (or more!)
1tablespoonlime juice(from about ½ lime)
¼teaspoonsalt and pepperor to taste
½jalapeñoseeds removed, finely diced (or less or more to taste)
Instructions
Make the salsa
In a large bowl, combine all the ingredients and mix. Season with additional salt, lime juice, or more jalapeño, if desired.
Prepare the ground pork taco filling
Heat the olive oil in a large skillet and add the minced onion and garlic. Saute for 5 minutes over medium heat until the onion softens and starts to brown.
Move the onion to the side and add the ground pork. Cook over medium heat stirring frequently for about 5 minutes, or until the pork is almost cooked.
Add the taco seasoning (and salt, if using), continue to cook, stirring frequently for 2-3 minutes, or until the ground pork is fully cooked. Squeeze in lime juice and mix well.
Assemble the tacos
Warm up your tortillas. Spoon ground pork taco filling into each tortilla, and top with salsa. Enjoy immediately!

Make your own taco seasoning, just enough for this recipe:
2 teaspoons chili powder
2 teaspoons sweet or hot paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
½ - 1 teaspoon salt**
½ teaspoon black pepper, or to taste
