2small zucchinissliced into ¼-inch rounds and then into half moons
5ozBrussels sproutscut in half or quartered if they're large
4-6chicken apple sausage linkssliced (make sure to use cooked sausage links)
2clovesgarlicminced
Optional garnish: chopped fresh scallions, parsley, or cilantro
Instructions
Preheat your skillet over medium heat. Once your skillet is hot, add the oil, bell peppers, and onions. Cook until softened, about 3 to 4 minutes, stirring frequently.
Add the brussels sprouts and zucchini. Cook for an additional 3 to 4 minutes, stirring frequently. Add more oil if the vegetables burn or stick to the pan.
Add the sausage. Cook for an additional 3 minutes, stirring frequently.
Add the minced garlic and stir for about 1 minute to release the flavors of the garlic, but not burn it. Remove from heat and serve warm, garnishing with fresh herbs, if using.
Notes
Try adding or subbing yellow squash, green beans, sliced mushrooms, lightly steamed broccoli, sugar snap peas or snow peas to the veggie mix!
Try this with spicy or sweet Italian sausage: just remove the sausage meat from the casing and brown the sausage in the skillet first, breaking it up with your spatula. Make sure to cook the sausage through.
Try other sliced fully cooked sausages, such as chorizo, kielbasa, Andouille sausage, chicken sausage with feta, or chicken sausage with sun-dried tomatoes.
Try adding some sauce, such as a drizzle of Worcestershire sauce or soy sauce. Try adding some spice, with a generous pinch of Cajun seasoning.
Double the veggies if you want a lighter dish. Double the sausage if you want a more protein-rich dish.
For a gluten-free stir fry, make sure your chicken sausage is gluten-free and don't add any sauces.
Serve on its own for a low-carb meal, or over rice or pasta.
