I absolutely LOVE these types of recipes, the kind that take just over 20 minutes to make and can be customized to use whatever ingredients you have on hand. My shrimp and sausage skillet or veggie and chorizo skillet are perfect examples of this.
For this recipe, I use bell peppers, zucchini, brussels sprouts, and onions as the veggie, and use chicken apple sausage links as the protein.

Chicken sausage dinner
The chicken apple sausage is usually sold fully cooked, making for a super quick dinner. Chicken sausage is lighter and less greasy than pork sausage, so it is a great option for a healthy sausage dinner. You can use any kind of chicken sausage you like. Another popular option that I see in stores is chicken sausage with feta, and chicken sausage with sun-dried tomato.
This is a GREAT dish to keep in mind if you're looking for recipes for chicken sausage.
Just a little garlic is all you need to add for flavor to this easy recipe, however you can always add a drizzle of Worcestershire sauce or soy sauce if you like.

Ingredients
- 2 red bell peppers, diced into chunks
- 1 purple onion, diced into chunks (or use any onion)
- 2 small zucchinis, sliced into ¼-inch rounds and then into half moons
- 5 oz Brussels sprouts, cut in half or quartered if they're large (that's half of a 10-oz package, if your grocery store carries that size)
- 4 chicken apple sausage links, sliced (cooked sausage links)
- 2 cloves garlic, minced
- 1 tablespoon olive oil, for cooking
- Optional garnish: sliced scallions, parsley, or cilantro

Other ingredient ideas
Try adding or subbing yellow squash, green beans, sliced mushrooms, sugar snap peas or snow peas to the veggie mix!
Try this with spicy or sweet Italian sausage: just remove the sausage meat from the casing and brown the sausage in the skillet first, breaking it up with your spatula. Make sure to cook the sausage through, then cook the veggies in the sausage drippings. Or you can air fry a whole Italian sausage and then slice it up for this stir fry.

Instructions
Step 1: Preheat your skillet over medium heat. Once your skillet is hot, add the oil, bell peppers, and onions. Cook until softened, about 3 to 4 minutes, stirring frequently.

Step 2: Add the brussels sprouts and zucchini. Cook for an additional 3 to 4 minutes, stirring frequently. Add more oil if the vegetables burn or stick to the pan.

Step 3: Add in the sausage. Cook for an additional 3 minutes, stirring frequently.

Step 4: Add the minced garlic last. Stir this into your skillet mixture for about 1 minute to release the flavors of the garlic, but not burn it. Remove from heat and serve warm and garnishing with fresh herbs, if using.
