Instructions
In a large bowl, microwave the chocolate chips in a microwave safe bowl for about 1 minute, stopping and stirring every 15 seconds. Continue until everything is nice and melted.
11 oz white chocolate baking chips
Stir in powdered sugar and peanut butter (hint: spray the measuring cup before adding peanut butter to it, it will come out easily!). Mix until everything is smooth.
2 tablespoons powdered sugar, ¾ cup creamy peanut butter
Pour in the chow mein noodles. Stir and fold in gently using a silicone spatula until everything is well mixed and coated.
8 oz chow mein noodles
Spray a standard 12 muffin tin with non stick cooking spray. Wipe each muffin tin with a paper towel to make sure it’s not too oily in them.
Spray a rounded tablespoon with cooking spray, scoop some of the chow mein mixture and drop it into the tins. Press down to make a dip in the middle like a nest. Repeat until the muffin tin is full, spraying the spoon as needed to keep the chow mein mixture from sticking to it.
Put 3 chocolate eggs in the middle of the nests.

Place in the fridge for 20 minutes or until solid, and then pop out of the tins and serve! If they are stuck, use a fork to help scoop them out.
Notes
Try this recipe with chocolate chips or butterscotch chips instead of white chocolate.
If you don't have a large microwave-safe bowl, melt the chocolate in a medium bowl and use a silicone spatula to transfer everything to a large bowl.
You can use any round or egg-shaped candy instead of the Cadbury mini eggs, such as peanut m&ms.
