I always keep a wheel of brie in my fridge so I can whip up this easy appetizer last-minute! This whipped brie would be perfect for a charcuterie board, cheese tray, or party appetizer. See the notes for lots of topping and serving ideas.
Electric mixer(stand mixer is best because it's more hands-off)
Silicone spatulato remove all the whipped brie from the mixer bowl
Ingredients
12ozbrie cheese
toppings and crostini for serving(see notes below for ideas)
Instructions
While the brie cheese is still cold, use a knife to cut off the rind. Chop the brie into smaller pieces. Place the brie pieces into your mixer bowl and let it come to room temperature. This will help it whip up easier.
Whip the brie cheese on medium speed until it becomes light and fluffy. This will take about 8-10 minutes. The brie will remain chunky and firm at first, but just keep going and it will turn into a soft spread.
Transfer to your serving bowl or plate and top with whatever toppings you like, or serve the toppings on the side!

Notes
Topping ideas: fig jam, your favorite marmalade, cranberry sauce (awesome for a Thanksgiving appetizer), honey, balsamic glaze, spicy honey, olive oil, toasted chopped pistachios, candied nuts, pomegranate arils, herbs (try fresh parsley, rosemary, or thyme, or dried herbs de Provence), fresh berries, chili oil.Serving ideas: serve with crostini, fancy crackers or plain crackers, toasted baguettes, crudités. Do not use a smaller size brie wheel because it will be harder to whip together and will stick to the wall of the bowl. The nutrition facts are estimated assuming 1.5 oz of brie per serving and do not include toppings, since I can't control which toppings you use or how much people will eat!
