Ritz crackers and Andes chocolate mints are a match made in snack heaven. These two ingredients are all you need to make this easy dessert.
For this recipe, you melt Andes Creme de Menthe thin mints or chocolate chips, then you dip Ritz crackers into the melted minty chocolate. You can decorate with sprinkles or crushed nuts, or a sprinkling of sea salt if you want, but that's optional. Let the chocolate set, and your Ritz cookies are ready!
Use whatever color sprinkles you like! Red and green for Christmas, blue and white for Hanukkah, pink and red for Valentine's Day... you get the idea!

Ingredients
- 10-ounce package Andes Creme de Menthe baking chips or 10 oz Andes Creme de Menthe Thins (chocolate chips with mint flavor or the actual thin mint chocolates)
- 2 sleeves Ritz crackers (60-64 crackers, typically)

For this recipe, you'll need:

Instructions
Line a large cutting board or several plates with parchment paper.
Microwave the mint chocolate chips in 20-second increments until fully melted, stirring after every 20 seconds. Once melted, stir together with a fork until completely smooth.

Gently place a Ritz cracker in the bowl. Use a fork to submerge the cracker fully and then to lift the cracker from the melted chocolate.

Let the excess chocolate drip off, then place the chocolate-covered Ritz cracker on parchment paper.

Continue with the rest of the crackers.
If decorating, add the sprinkles or other toppings before the chocolate hardens.

Let the chocolate harden for at least 40 minutes, or until fully solid. It can take up to an hour to harden at room temperature. You can speed this up by placing them in the fridge. Enjoy immediately, or transfer to a container with an air-tight lid. Store at a cool room temperature for up to 5 days, or in the fridge for up to 2 weeks.

- Instead of Ritz crackers, use mini pretzels.
- Decorate with crushed candy canes for an extra peppermint kick.
