These simple homemade Jerusalem artichoke chips are a great way to get a healthy snack or fun side dish on the table fast. I'll show you how to make them without an air fryer, dehydrator, or any fancy equipment!
I try really hard to eat as healthy as possible, but I'm not going to lie: I love the crunch of potato chips and other fried foods. But day-to-day, I try to fuel my body with good foods and healthier ingredients. Jerusalem artichokes are a much healthier alternative to potatoes - you can read more about them in my Roasted Jerusalem Artichokes recipe.
When we discovered these easy Jerusalem artichoke chips, snacking as we knew it was changed forever. The texture is so close to potato chips, you're going to really be shocked. And the basic sea salt flavor makes these the perfect snack or side dish that goes with everything.
This is a great budget-friendly snack recipe. Two small Jerusalem artichokes are enough to make a generous snack portion, and of course, you can double or triple the recipe.
Ingredients:
- 2 Jerusalem artichokes (also known as sunchokes)
- ¼ teaspoon sea salt, or to taste
Yes, these two ingredients are literally all that you need! But keep reading, I give you lots of flavor variation ideas below.
Equipment:
You will need a mandoline slicer to make sure you cut the artichokes perfectly even and thin. I *ALWAYS* strongly recommend wearing cut-proof gloves when using a mandoline, because those blades are really sharp and I've had a couple of really nasty cuts even though I was always trying to be careful. I always wear gloves since then. This mandoline comes with cut-proof gloves.
You will also need a large baking sheet and parchment paper, for easy cleanup.
How to make these Jerusalem Artichoke Chips
Step 1: Preheat the oven to 350F (180C), and line a large baking sheet with parchment paper. Scrub the Jerusalem artichokes clean with a brush or a clean sponge. They are a root vegetable, so they sometimes have dirt stuck in the little nubs. No need to peel them though!
Step 2: Using a mandoline, slice the Jerusalem artichokes.
Step 3: Place in a single layer on a parchment-lined baking sheet, sprinkle with sea salt, and bake until golden and crisp, about 15-20 minutes. The cooking time may differ between ovens, so make sure to check on the chips after about 12 minutes to make sure they don't burn!
Variation ideas:
→ Change up the seasonings to easily make different flavors of sunchoke chips:
- Try this homemade sriracha salt on top!
- Season with truffle salt instead of regular salt - add this after baking, since the truffle essence can evaporate during baking
- Add a sprinkle of Cajun seasoning or smoked paprika
- Use this citrus sprayer to spray a light mist of lemon juice on the sliced Jerusalem artichokes before baking
