Whipped goat cheese dip

I love making a dip so good that you just can't walk away from it because I can't stop eating it!! That's exactly what this creamy goat cheese dip with honey is.

It has a nice tang from the goat cheese, lots of creaminess thanks to the cream cheese, and a wonderful sweetness from the honey. The tart pomegranate pieces and crunchy salty pistachios on top just add even more flavor and texture and take it over the top!

How to serve whipped goat cheese

Serve this dip with your favorite crackers or pita chips. Spread it on a crostini or toasted baguette topped with cherry tomato confit. Add it to a holiday charcuterie board. DELICIOUS EITHER WAY.

Ingredients

  • 8 ounces goat cheese, softened to room temperature. I typically use unflavored plain goat cheese, but you can play around with herb or cranberry goat cheese, or whatever you like!
  • 4 ounces cream cheese, softened to room temperature (half a block of cream cheese)
  • 2-4 tablespoons honey, to taste + more for drizzling
  • ½ cup pomegranate arils. You can buy arils in the produce section of your grocery store to save time if you don't want to peel your own pomegranate.
  • ¼ cup chopped pistachios, toasted. I like to buy unsalted or lightly salted for this dip, because I like how they don't interfere with the flavor of the dip.
  • 1-2 sprigs fresh rosemary or thyme. You can use this just for garnish, or finely dice it and add it to the dip.

Make sure to see the "recipe variations" section below to see more ideas for what you can add to this dip, so you can make it over and over and never get tired of it!

Equipment

To make this dip, you'll need:

I typically don't even get the measuring spoons or cups because goat cheese comes in 4 or 8 ounce logs, cream cheese comes in 8 ounce blocks, and I eyeball the honey and the toppings... but you can certainly measure the ingredients out the first time.

Instructions

Combine the goat cheese, cream cheese, and 2 tablespoons honey in a food processor. Process until smooth. Give it a taste and see if you want to add more honey and process again.

Prep the toppings: clean the pomegranate arils, toast the chopped pistachios in a dry pan for a few minutes over medium heat (don't let them burn!), chop some rosemary or thyme off the sprig.

Transfer to your serving bowl, drizzle with honey, top with pomegranate arils, crushed pistachios, and herbs. Serve immediately, or see storage instructions below.

How to store whipped goat cheese dip

If you have leftovers, just simply cover the bowl with plastic food wrap and store in the fridge for up to 3 days. If you want to make this dip in advance, keep the dip refrigerated in a closed container until serving. I recommend keeping the toppings and the extra honey drizzle separate. Remove from the fridge 15-30 minutes before serving, garnish with toppings, and enjoy!

  • Skip the honey and garnish the dip with olives.
  • Add a bit of olive oil to the dip when blending, or a drizzle on top, for a more savory dip.
