Burrata Toast with Blistered Tomatoes & Crispy Garlic (And More Topping Ideas)

Burrata toast is one of my favorite lunches. Ever.

It's not a treat I have every week because burrata is not as healthy as my cottage cheese toasts, and frankly, burrata is a little too pricey for an "every-day" lunch. But it's such an amazing once-in-a-while treat!! Creamy burrata, garlicky tomatoes with balsamic glaze, delicious toasted crusty bread.... so good!!

Best bread for burrata toast

A good toast starts with good bread. A firm crusty bread is a must so that the liquid from the burrata and the toppings don't make the bread soggy, and so the bread can hold all the heavy toppings.

I like sourdough, or crusty olive oil and rosemary loaves from a local bakery that I can slice nice and thick. 

Another important thing to keep in mind is how you toast the bread matters. Instead of sticking it into a toaster oven and letting it dry out and get crispy, I like to toast the bread in a pan with some olive oil: brush or spray the toast with olive oil. Heat a large skillet over medium heat, place the toast oil side down, and toast for a couple of minutes until the bread is toasted and warm.

Remove from pan with tongs then top with your burrata toppings!

Where to buy burrata

If you have a local deli or cheese shop that makes their own burrata, my bet is that will be the freshest and tastiest burrata you can get. Many large grocery stores in the US have burrata in the refrigerated "fancy cheese" section. Look for it in a plastic container full of whey. Target and Walmart have burrata in many of their locations - check this affiliate link to see if the Target near you has burrata, and this link to check if your Walmart has burrata!

How to cut burrata for toast

I like to remove the burrata balls from their whey and let them sit out at room temperature for a few minutes. I find that the flavor really shines and the cheese softens if it's not straight from the fridge. 

Place a burrata ball on a plate and use a knife to score an "X" on top, taking care not to cut all the way through. Then depending on the size of your bread, you can either transfer the whole burrata ball to your toasted bread, or slice it in half and transfer one half of the burrata ball to each toast. I use a spoon or a spatula to transfer the burrata to make sure that the soft cheese inside does not spill out on its way to the bread.

Here are some of my favorite burrata toast topping combinations. I am listing them in order that you put them on top of the toast, from bottom to top, so you can put together the toast in the order that you read the ingredients:

  • Sliced tomatoes, burrata, black pepper, drizzle of balsamic glaze, fresh basil.
  • Burrata, blistered tomatoes with crispy garlic (see below for how to make these), drizzle of balsamic glaze or honey, fresh basil.
  • Burrata, sliced avocado, sea salt, lime juice, fresh cilantro leaves.
  • Burrata, hot honey.
  • Burrata, fresh sliced strawberries, balsamic glaze.
  • Fresh baby arugula, burrata, sliced ripe peaches, honey.
  • Prosciutto, burrata, fresh herbs.
  • Burrata, fresh berries, honey.
  • Burrata, berry preserves.
  • Burrata, fresh sliced figs, honey.

How to make blistered tomatoes for burrata toast

I have these amazing recipes for tomato confit and blistered tomatoes for my pesto crostini. But both of those take a little too long for a quick lunch, so I came up with a 5 minute method to make stovetop blistered tomatoes:

Wash and pat dry a large handful of cherry tomatoes. Mince a garlic clove into small pieces. Heat a pan over medium-high heat. Spray or brush a tiny bit of olive oil, then add the tomatoes. Let them cook undisturbed for 2-3 minutes until they start to blister. Drizzle in about a tablespoon of olive oil and the minced garlic. Lower the heat so the oil doesn't burn, stir, and cook for 1-2 minutes until the garlic turns golden and starts to get crispy. Remove from heat and transfer to a heat-safe bowl.

Let cool for a few minutes and enjoy on some creamy burrata!

Ingredients

For the burrata toast:
  • 4 slices crusty dense bread - (soft bread might not hold the burrata)
  • olive oil - I prefer to use an oil sprayer, but you can brush oil on the bread
  • 2 balls burrata - bring to room temperature before serving for a stronger flavor
  • salt and pepper - to taste
  • balsamic glaze - to drizzle on top
  • fresh basil leaves - for garnish
  • toppings of your choice, such as blistered tomatoes - see notes below for ideas
For the blistered tomatoes with crispy garlic (make these first):
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil - + a drizzle
  • 1 clove garlic - minced
  • sea salt - to taste

Instructions

Make the blistered tomatoes:
  • Heat a pan over medium-high heat. Spray or brush a tiny bit of olive oil, then add the tomatoes. Let them cook undisturbed for 2-3 minutes until they start to blister.
  • Add about a tablespoon of olive oil and the minced garlic. Lower the heat, stir, and cook for 1-2 minutes until the garlic turns golden and starts to get crispy. Season with sea salt.
  • Remove from heat and transfer to a heat-safe bowl. Let cool for a few minutes while you prepare the toast.
Make the burrata toast:
  • Brush or spray each slice of bread with olive oil on one side. Heat a large skillet over medium heat, place the toast oil side down, and toast for a couple of minutes until the bread is toasted and warm.
  • Use a sharp knife to score an "X" on top of the burrata ball (make a cross on top), then slice the burrata in half.
  • Use a spoon to transfer half a burrata ball on top of the toast. Spread the burrata across the whole slice of toast.
  • Season with salt and pepper. Add a few blistered tomatoes and crispy garlic pieces on top. Drizzle with balsamic glaze and garnish with fresh basil leaves. Enjoy immediately!

Try these toppings below! I listed them in order that you put them on top of the toast. Most of the time the burrata goes first right on top of the toast, except for a few instances where I recommend another ingredient below the burrata:
