Today I bring you another gorgeous appetizer: Whipped Feta with Truffled Mushrooms, which can be served on crackers or crostini.

I am pretty much addicted to whipped feta – it is so creamy and smooth and salty and delicious – and it goes so well with many different pairings – great as a dip, on crackers, as a spread on crostini, paired with sweet (a touch of jam or candied orange??) or savory things (tomato slice or avocado?). In this recipe I pair it with something just a bit luxurious – truffled mushrooms. Baby bella mushrooms sauteed with thinly sliced onions and drizzled with Truffle Infused Olive Oil. The combination of all of this on top of a cracker is just absolutely heavenly, and you will be popping these crackers into your mouth nonstop.

This is a great appetizer to serve at a holiday party because it is super elegant and delicious. A little bit of truffle-infused olive oil goes a long way to give the sauteed mushrooms an extra special flavor that is out-of-this-world delicious. Your guests will appreciate it. And you’ll appreciate how easy it is to make these.

Whipped Feta with Truffled Mushrooms Appetizer

Ingredients

  • 1 cup crumbed feta cheese
  • 1/4 cup sour cream
  • 2 teaspoons fresh dill
  • 8 oz sliced baby bella mushrooms
  • 1/2 yellow onion , thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon truffle-infused olive oil
  • Salt & pepper , to taste
  • Crackers or Crostini (about 24)

Instructions

  • In a small food processor, combine feta cheese and sour cream and process until smooth. Add the fresh dill, pulse to mix in the dill.
  • Heat 2 tablespoons of olive oil into a medium saucepan and add the sliced mushrooms and onion. Season with salt and pepper. Saute over medium heat for 5-7 minutes until the mushrooms are cooked to your liking. Remove from heat and stir in 1 tablespoon of White Truffle Infused Olive Oil.
  • Assemble the crackers by spreading about 1-2 teaspoons of whipped feta on the crackers and topping with 1-2 sliced mushrooms and onions. Serve immediately.
